GlassAdam's Super-Easy Baked Chicken

You will need:
-large, oven-safe flat rectangular dish
-aluminum foil
-boneless chicken breast
-parsley flakes
-garlic powder
-chicken-flavored soup base (it's in a jar, it's actually a paste, from here on in I'll refer to it as "chicken paste")

What to do:
1) preheat oven to 350 degrees

2) put a teaspoonful of chicken paste in a bowl, add water to fill up about half the bowl, microwave for 1 minute, and stir until mixed.

3) pour the paste/water solution into the rectangular dish. You should have enough to just cover the entire bottom of the dish. You won't need a lot, since its only purpose is to prevent the chicken from drying and add a bit of flavor.

4) take a chicken breast, stab with a fork a few times, and spread a thin layer of chicken paste over one side of each breast. You don't need a lot, nor do you need an even coat-- the flavor from the paste is STRONG (and salty). Arrange all the coated breasts in a single layer in the dish.

5) Once all the breasts are in the dish, sprinkle some garlic powder over them. Remember, garlic powder will add garlicky flavor, so if you're not a fan, don't add as much. I like to add a decent amount.

6) next, sprinkle a lot of parsley flakes over each breast. You're going to want to use a large amount to balance the flavor of the paste and the garlic powder. You'll know you've got enough when they're pretty much completely covered in green.

7) cover the entire top of the dish with aluminum foil, TIGHTLY. I usually use two sheets going short-ways, and then one bigger sheet going longways. Fold around the edges to make them tight-- you want all the steam to stay inside the dish while it bakes.

8) by now your oven should be fully pre-heated. Place the foil-covered dish in the oven on a middle rack. You'll want to bake it for one hour to an hour and 10 minutes at 350 degrees. You'll know it's pretty close to done when the aroma from the garlic and whatnot is almost unbearable. But it will smell good and will make you hungry.

9) to make sure it's done, take a knife and cut a slit into the thickest section of one of the breasts. You should not see any pink. The chicken itself will be super-tender and you may not even need a knife for this step or for eating it!

10) take out the dish, take off the foil, and use a spatula to serve onto plates. Enjoy!

PS I'm thinking of doing buttered noodles as a side-dish with this next time, but other good choices are: steamed vegetables, rice, cheesy rice or cheesy noodles.

I'll try to add pics or at least illustrations later. It looks like a long recipe, but that's because I'm kind of long-winded; it's actually REALLY easy. Here's a summary: put water in dish, spread stuff on breasts, put breasts in dish, sprinkle shit all over the dish, cover, heat, eat. Any questions, just ask!

OK, Here's my favorite recipe for Chicken Quesadillas. A very easy recipe.

Things you'll need:
Chicken (preferably not frozen, chicken's never the same after it's been frozen)
Monterey Jack Cheese
Tortillas
Cilantro
Tomatoes
Red Onions
Black Beans (optional)
Bell Peppers (optional)

First we make the Pico de gallo salsa, chop the tomatoes, cilantro, red onions and bell peppers (if you decided to add them). Put them in a bowl together and mix. Don't crush them!

Then grill the chicken with a bit of pepper and chop.

Then take a skillet that will fit the size of tortilla you got. Put one tortilla on it. Add the Cheese, then the Pico, then chicken, black beans (if you want) and then some more cheese (for glue and it's tasty). After all that you put the second tortilla on top. Grill till brown on the bottom and the cheese is melting. Then use a plate and a spatula to flip it and cook until brown. Be sure the cheese is nicely melted. Serve.

If you want me to go into any detail, just ask.

You eat for one third of your life. You may as well learn to make some good eats.

No, don't use liquid chicken broth! You need the paste to spread onto the top of chicken!!! It should be very close to the regular chicken broth, probably on the same shelves.

Here's the stuff I bought, but there are other brands:

Yeah it is a lot of servings, for its intended use I suppose. On the other hand, I used half the jar for that chicken recipe alone! So it'll likely last through one more use and that's it.

Eggs are more difficult than people make it out to be. Like the saying "easy as pie". Who said that?! Pie isn't that easy. Especially if you make it from scratch and what pie are they talking about? Pecan pie? Pumpkin? Cherry?!

Apply more cream cheese than peanut butter, because the latter's taste is stronger.

Time for me to contribute. Today I'll be giving my recipe for making potstickers.

For the filling:

Ingredients

3/4 lbs of ground pork
1/2 lbs of shrimp (entirely optional)
green onions (can also be done with regular onions)
1 egg
cornstarch
1/2 teaspoon of sesame oil
a pinch of salt

First, chop the green onions very fine. Then if the shrimp is shelled, shell it completely.

Mince the shrimp (or you can use a food processor). Combine the ground pork and shrimp together.

Add the green onions. Crack one egg in a separate bowl and scramble it. Add that to the meat mixture.

Add the sesame oil and salt. Mix with hands well. Then add about 3 level tablespoons of cornstarch to the meat mixture.

Mix all that together.

Set aside and put in fridge.

For the sauce:

1/2 cup of soy sauce
a 1/2 tsp of minced fresh ginger
1/2 tsp of minced fresh garlic
lemon juice or vinegar (for acidity)
white sugar
oil for sauteing the garlic and ginger

Get a small sauce pan and put the minced ginger and garlic inside. Add about a tsp of oil (any kind will do, just not olive oil).

Put the heat to about low-medium. Brown the ginger/garlic, DO NOT BURN.

Then add the liquid ingredients. Sweeten to taste with the sugar.

Turn off heat, set aside.

If you want some spicy, buy a bottle of sriracha, which is a red chili paste. You can find this in Asian markets.

For a wrapper, head to your local Asian market or grocery and look for dumpling/wonton/shu mai/ potsticker wrapper.

It's cheap, about $1.50.

Now you have all the ingredients, we move onto making the dumpling itself.

I'd show you myself, but since I'm too lazy to do it, look at this video and forward to 2:07.

For "glue", use water.

Onto the cooking methods.

You can do it three ways. The easiest way is too deep fry it.
Get a pot of oil, heat it up, make it hot, then drop the dumplings in.

This is the fattest way to cook it too.

The second way is to steam it. You get a steamer (it's like a metal flower thing). You get a piece of cabbage, line the top of the flower with it, put the dumpling it, then cover and steam it.

This one requires your constant attention, since the water could run out and result in burning.

The final one, which I recommend, is the "authentic" version of cooking dumplings. It's a hybrid of frying and steaming.

To do this, put a little oil in a frying pan (make sure you have a cover for this).

Put the heat to medium.

When the oil is hot, put the dumplings inside, letting it brown on one side for a while.

When it's getting golden brown, you add about 1/3 cup of regular water to the pan, cover the pan completely, and put the heat up to medium high.

Let the dumplings "boil" in the water until it completely evaporates.

Once it evaporates, lower the heat to medium-low and flip it to the other side.

You want to get a crispy skin, so let it brown.

Be careful not to burn it, it's VERY easy to do.

And there you have it.

I hope someone here tries it out. As all recipes, nothing is set in stone. If you think a certain taste is lacking, do what you can to adjust (add sugar if not sweet enough, more soy sauce if it's too acidic etc.)

Tonight, I shall be making BAKED POTATOES!!! My method (no foil wrapping!) provides for a tasty, slightly crispy skin.

You need:

- potatoes
- butter (or substitute)
- table salt (or sea salt yummm)
- fork
- aluminum foil

What to do:

- Set your oven to "bake" and preheat it to 350 degrees.

- Set out a plate or napkin where you'll be preparing your potatoes. On the plate or napkin (or whatever) sprinkle some table salt.

- Wash you potatoes and set on the salt-covered plate. Take a generous amount of butter and smother those fuckers all over. Cover the hell out of 'em.

- When all the potatoes are sufficiently covered in butter, take some more salt and sprinkle over the top. The goal here is to make sure that when you're done, the potatoes are covered in butter and then have salt sprinkled all over. Alternately, you could just roll the buttered potatoes on the salt-covered plate. [UPDATE: I've recently taken to sprinkling other assorted spices on top of the potatoes before I bake them, along with the salt and butter. For example, on tonight's batch I sprinkled garlic powder and parsley flakes, I've used oregano as well.]

- Take a fork and stab the potatoes twice on each side, for a total of 4 stabbings per potato. You don't have to go all Friday the 13th on 'em, just make sure you get some holes in there. This is to prevent the potatoes from exploding in the oven!!!

- By now your oven should be preheated. Take an oven pan and lay out some aluminum foil on top of it. This will be to catch the drippings from your potatoes as they bake! Set the foil-covered pan on a lower rack in the oven.

- Lay the potatoes on a center rack in the oven, DIRECTLY ON THE RACK (no foil or pan underneath necessary). The foil-covered rack that you put below will catch all the mess (and there really won't be much). [see picture]

http://i59.photobucket.com/albums/g306/glassadam/potato.jpg Sorry for the blurry picture!

- Let the potatoes bake for 1 to 1.5 hours at 350 degrees. Halfway through, flip the potatoes over (this probably isn't essential, but I like to do it anyway).

- You'll know they're done when you gently squeeze a potato (using an oven mitt, of course!) and there's a decent amount of give (softness). Alternately, you could take a fork and stab a potato and there will be zero resistance.

-When you're confident that they're done, take the potatoes out, cut in half, fill with more butter, sour cream, cheese, bacon, &c... Whatever you like.

- Enjoy!

Beer Bread

You will need:
- 3 cups self-rising flour
- half-cup sugar
- 1 12oz can beer (room temp) any brand (I used Miller High Life last time)
- 2 tablespoons butter (melted)
- oven-safe dish
- wooden spoon or whisk

What to do:

1) set oven to 'bake', preheat oven to 350 degrees

2) grease 5x9 dish (or any shaped pan around those dimensions, really, as long as it's oven-safe. The one I use is actually 8x8 glass. Square shape isn't recommended, but it's all I've got :()

3) mix flour, sugar, and beer together, beating well until smooth. You can use a wooden spoon, but a whisk works best

4) pour mixture into pan, drizzle melted butter over top

5) bake at 350 degrees for 1 hour, or until you judge it's done (a good way to test is to stick a toothpick into it. If you pull out the toothpick and it comes out clean, it's done).

6) when done, remove from oven and let cool just a bit. Serve warm with butter.

Just in time for St Paddy's Day:

Easy Irish Soda Bread!!!

What You Need:
- 3 and a half cups flour
- half cup sugar
- half teaspoon salt
- half teaspoon baking soda
- half teaspoon baking powder
- one teaspoon cream of tartar
- one cup raisins
- two cups milk
- oven-safe cake pan
- cooking spray

What To Do:

- preheat oven to 350 degrees

- spray cooking spray all over inside of the pan you intend to bake the bread in. Once that's done, throw flour liberally all over the inside of the greased pan. This is too ensure that the bread will not stick to the pan when baked.

- mix all ingredients except milk by hand in the pan.

- add milk to mixture, mix well

- bake at 350 degress for one hour.

- you can tell it's done by sticking a toothpick into the bread. If it comes out clean, it's done.

- serve warm or cold with cream cheese (or butter, I suppose)
